Ancient Artisan Bread Kitchen
Our Artisan Bread is made the way of our forefathers. All natural grains, yeast and water, hand kneaded to perfection and then fired in our stone oven. Our bread starts out as a BIGA which is a small quantity of flour, water and yeast. The BIGA is a substantial cultivation of yeasts and acids which is allowed to rest 16 to18 hours. The results of this procedure is a multiplication of the yeast, hydration and maturation of the gluten and formation of acid and aromatic substances. The next step is called the CRESCENT which involves adding more flour, water and a little yeast. The rising time varies from 3 to 8 hours prior to the preparation of the final dough. This further developes the grains and texture. The final dough is than kneaded and hand formed into a ball or rectangular loave and allowed to rise one more hour before being fired in the oven.
HONEY
The end result is a bread bursting with the different grain flavours and a texture that we have long forgotten.
Artisan Bread
Home canning puts the pleasure of eating natural, healthy and delicious produce all year long. As our great-grandparents knew, there was no better-tasting, fresh, crisp pickle than the one you made yourself. We at Honeybrook Farm strive to bring that taste back to the kitchen table with all of our fruit and vegetable preserves. Our canning produce is field ripened and picked at the peak of maturity. We use a minimum of salt, sugar and preserves, allowing the fresh taste of the produce to shine through.

Honeybrook Farm offers an array of savoury delights for our customers including chutneys, jellies, marmalades, jams, sauces, relishes and salsas. Some of our customers favourites are Ruby Red Pepper Jelly, Rocky Mountain Marmalade, Cranberry Apple Cinnamon Chutney, Sinaloa Salsa, Honey Rose Wine Mustard, Northern Red Horseradish, Mustard pickles and Pickled eggs with Peppers.
